  • 1 cup Biscoff Cookie Butter Creamy texture
  • ½ cup unsalted Kerrygold Butter, softened High-quality butter recommended
  • ¾ cup light brown sugar
  • 1 large egg
  • 1 yolk
  • 2 tsp McCormick Vanilla Extract
Dry Ingredients
  • cups King Arthur Flour
  • 1 tsp Simply Organic Cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
For Garnish
  • Cinnamon, whole cloves, star anise For garnishing before serving

Method
 

Preparation
  1. In a large mixing bowl, blend together Biscoff Cookie Butter and softened Kerrygold Butter until creamy.
  2. Add light brown sugar and mix until fluffy.
  3. Crack in the egg and yolk, and add vanilla extract; mix until smooth.
  4. In another bowl, whisk together flour, cinnamon, baking soda, and salt; fold into the wet mixture.
  5. Chill the dough for 30 minutes.
Baking
  1. Preheat oven to 350°F (175°C).
  2. Scoop dough onto a greased baking sheet and bake for 10-12 minutes until golden.
  3. Sprinkle with cinnamon or a clove before serving.

Notes

Chill Time Is Key: Don’t skip that 30-minute chill; your cookies will thank you for it! If you can’t find Kerrygold, any high-quality unsalted butter will do. For chewier cookies, slightly underbake them; they’ll firm up as they cool. Consider adding a pinch of nutmeg for a cozy twist. Vegan Option: Swap egg for a flaxseed mixture and use vegan butter.
