- In a large mixing bowl, blend together Biscoff Cookie Butter and softened Kerrygold Butter until creamy.
- Add light brown sugar and mix until fluffy.
- Crack in the egg and yolk, and add vanilla extract; mix until smooth.
- In another bowl, whisk together flour, cinnamon, baking soda, and salt; fold into the wet mixture.
- Chill the dough for 30 minutes.
Baking
- Preheat oven to 350°F (175°C).
- Scoop dough onto a greased baking sheet and bake for 10-12 minutes until golden.
- Sprinkle with cinnamon or a clove before serving.
Notes
Chill Time Is Key: Don’t skip that 30-minute chill; your cookies will thank you for it! If you can’t find Kerrygold, any high-quality unsalted butter will do. For chewier cookies, slightly underbake them; they’ll firm up as they cool. Consider adding a pinch of nutmeg for a cozy twist. Vegan Option: Swap egg for a flaxseed mixture and use vegan butter.
