Liquids
  • 4 cups beef broth Use vegetable broth for a vegetarian option.
  • 2 cups milk Add more for a thinner consistency.
Cheese
  • 1 cup shredded cheddar cheese Can be omitted for a lighter version.
Herbs and Seasonings
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
Garnish
  • Chopped fresh parsley Optional for garnish.

Method
 

Cooking the Beef
  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess fat if needed.
Sautéing Vegetables
  1. Add the chopped onion and minced garlic, cooking until softened and fragrant—about 3-4 minutes.
Simmering the Soup
  1. Stir in the diced potatoes, beef broth, corn, peas, carrots, thyme, rosemary, salt, and pepper.
  2. Bring to a boil; reduce heat and let it simmer for 20-25 minutes or until the potatoes are tender.
Finishing Touches
  1. Pour in the milk and stir in the cheese until melted and creamy.
