Preparation
- In a large Dutch oven or heavy-bottomed pot, cook the sliced bacon over medium heat until crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain. Reserve 1-2 tablespoons of the rendered bacon fat in the pot.
- Add the diced onion to the pot with the bacon fat and sauté for 5-7 minutes until softened. Add minced garlic and cook for another minute until fragrant.
Cooking
- Pour in the chicken broth, scraping the bottom of the pot to loosen browned bits. Stir in the ranch seasoning mix. If using diced potatoes, add them now.
- Bring to a gentle simmer and cook for 10-15 minutes until potatoes are fork-tender.
- Reduce heat to low and add the softened cream cheese, stirring until melted and smooth.
- Stir in the shredded chicken and shredded cheddar cheese, continuing to stir until fully melted. If using, add frozen corn and cook for a few more minutes until heated through.
- Taste the soup and adjust seasonings as needed. Ladle into bowls and garnish with crumbled bacon, chopped green onions or chives, and extra shredded cheese.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. For freezing, use a freezer-safe container and reheat gently on the stovetop, adding broth if the soup thickens.
