Ingredients
  

Crust
  • 1.5 cups Oreo cookie crumbs Can substitute with any chocolate cookie crumbs
  • 0.5 cups unsalted butter, melted
Filling
  • 16 oz cream cheese, softened Should be at room temperature for best texture
  • 1 cup sugar
  • 1 cup sour cream Can substitute with Greek yogurt
  • 1 tsp vanilla extract
  • 3 large eggs
  • 8 oz dark chocolate, melted Use high-quality chocolate for the best flavor
  • 1 cup fresh raspberries Gently fold into the cheesecake filling
Ganache
  • 0.5 cups heavy cream Should be heated until just boiling
  • 8 oz dark chocolate, melted (extra for ganache)

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine Oreo cookie crumbs and melted butter. Press this mixture firmly into the bottom of a springform pan to create the crust.
Filling
  1. In a separate bowl, beat the cream cheese and sugar until smooth.
  2. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.
  3. Stir in the melted dark chocolate and gently fold in the raspberries.
  4. Pour the cheesecake filling onto the crust and smooth the top.
Baking
  1. Bake for 55-65 minutes or until the center is set.
  2. Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours.
Ganache Preparation
  1. For the ganache, heat heavy cream in a small saucepan until just boiling, then pour it over the remaining melted dark chocolate and stir until smooth.
  2. Pour the ganache over the chilled cheesecake and let it set before serving.

Notes

Serve with a drizzle of leftover ganache and a sprinkle of fresh raspberries on top. Pair with a dollop of whipped cream for extra indulgence. Store in the fridge for up to a week or freeze for 2-3 months.
