Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder Sifted for smoother batter
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs Room temperature
  • 1 cup whole milk Room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Gradually added
  • 1 cup almond flour
For the Frosting and Garnish
  • Chocolate frosting For layering and topping
  • Sliced almonds For garnish, can be toasted for more flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract. Mix until smooth.
  4. Gradually stir in boiling water until well combined.
  5. Fold in almond flour.
  6. Divide the batter evenly between the prepared pans.
Baking
  1. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Assembly
  1. Once cooled, layer with chocolate frosting in between and on top.
  2. Garnish with sliced almonds. Serve and enjoy!

Notes

For best results, use room temperature ingredients and sift the cocoa powder. Try adding espresso powder for a mocha twist.
