Preparation
  1. Preheat the oven to 350°F (175°C) and grease an oven-safe dish.
  2. In a bowl, whisk together the milk, eggs, vanilla extract, and sweetener until smooth.
  3. In another bowl, combine rolled oats and cinnamon.
  4. Pour the wet mixture over the dry ingredients and stir until well combined. Add chopped fruit if desired.
  5. Transfer to the prepared baking dish and bake for 25-30 minutes until set and golden on top.
  6. Serve warm with additional fruit or a drizzle of honey.

Notes

For best results, don't skip adding fresh fruit for flavor and color. Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 2 months.
