  • 2 large cucumbers English cucumbers preferred for less bitterness
  • 1 cup mozzarella balls Can substitute with feta cheese or diced avocado
  • 1 cup cherry tomatoes Halved for better mixing
  • 1/4 cup red onion Thinly sliced
  • 1/4 cup fresh basil leaves Torn before adding
Dressing Ingredients
  • 3 tablespoons olive oil Whisk until frothy
  • 2 tablespoons balsamic vinegar
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. In a large bowl, combine the sliced cucumbers, mozzarella balls, cherry tomatoes, and red onion.
  2. Tear the basil leaves and add them to the bowl.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and gently toss everything to combine.
  5. Serve immediately or chill in the refrigerator before serving.

Notes

For best results, keep the dressing separate until ready to serve to maintain the salad's crunchiness. The salad lasts in the fridge for about 2-3 days.
