Preparation
- Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil.
- In a mixing bowl, whisk together the ricotta cheese, eggs, and milk until smooth.
- Stir in the grated Parmesan cheese, spinach, onion, salt, and pepper.
- Pour the mixture into the greased baking dish, spreading it evenly.
Cooking
- Bake for 35-40 minutes, or until the quiche is set and lightly golden on top.
- Let it cool slightly before slicing and serving.
Notes
For a texture tweak, sprinkle some breadcrumbs on top before baking. Store in the fridge for up to 3 days or freeze for up to a month. Serve warm, possibly with salad or a sprinkle of crushed red pepper.
