  • 6 large large eggs
  • 1 cup whole milk can substitute with half-and-half
  • 1 cup heavy cream can use half-and-half or Greek yogurt as a substitute
  • 1 cup shredded Gruyere or cheddar cheese try different cheese types for flair
  • 1/2 cup cooked bacon or ham chopped; skip if you prefer meatless
  • 1/2 cup chopped spinach
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a pie dish or quiche pan.
  2. In a skillet, heat the olive oil and sauté the onions until they’re soft and fragrant.
  3. In a bowl, whisk together the eggs, milk, heavy cream, salt, and pepper until well blended.
  4. Stir in the cooked bacon (or ham), spinach, onions, and cheese.
  5. Pour the egg mixture into the prepared dish.
  6. Bake for 35-40 minutes, or until the top is golden and a toothpick comes out clean.
  7. Let it cool a bit before slicing and serving.

Notes

This dish can be made ahead of time for easy meals. It's versatile; feel free to experiment with different vegetables and cheeses. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months.
