Crustless Quiche

Main Ingredients
  • 6 large large eggs
  • 1 cup heavy cream
  • 1/2 cup milk Low-fat milk is an option, but may alter texture.
  • 1 1/2 cups shredded cheese (cheddar or Gruyère) Cheese can be sprinkled extra on top for a crust-like finish.
  • 1 cup diced vegetables (spinach, mushrooms, peppers, or zucchini) Feel free to customize with whatever veggies you prefer.
  • 1/2 cup cooked bacon or ham (optional) Optional ingredient, can be omitted for a vegetarian quiche.
  • 1 small onion, finely chopped
  • 1 tbsp olive oil or butter
  • to taste Salt and pepper
  • 2 tbsp fresh herbs, chopped

Method
 

Preparation
  1. Preheat your oven to 375°F and grease a 9-inch pie dish.
  2. Sauté the onion in olive oil until fragrant, then add your diced veggies. Cook until tender, then let cool slightly.
  3. In a mixing bowl, whisk together the eggs, heavy cream, milk, salt, and pepper.
  4. Stir in the sautéed vegetables, cheese, and bacon/ham if you’re using it.
Baking
  1. Pour the mixture into the greased pie dish and pop it in the oven.
  2. Bake for 30–35 minutes or until the quiche is set and golden on top.
  3. Cool for about 5–10 minutes, slice it up, and serve warm or at room temperature.

Notes

This quiche can be stored in the fridge for about 4 days or frozen for up to 3 months. For reheating, bake in the oven at 350°F until warmed through.
