Preparation
- Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.
- Prepare and sauté your chosen vegetables.
- In a mixing bowl, whisk together eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
- Fold in the mix-ins.
Baking
- Pour the mixture into the dish and bake for 40 to 55 minutes until golden brown.
- Allow to cool for 10-20 minutes before slicing and serve.
Notes
Crustless quiche keeps well in the fridge for about 3-5 days and can be frozen for up to 2 months. To reheat, bake at 350°F (175°C) until warmed through. Add herbs or leftovers for variations.
