  • 6 large large eggs
  • cup whole milk
  • ¼ cup half-and-half can be substituted with additional milk or dairy-free options
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon Dijon mustard optional
  • pinch ground nutmeg optional
Mix-ins
  • 1 ½ cups mix-ins of choice such as grated Gruyère cheese, chives, lean beef, sautéed broccoli, onions, or vegetables

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. Prepare and sauté your chosen vegetables.
  3. In a mixing bowl, whisk together eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
  4. Fold in the mix-ins.
Baking
  1. Pour the mixture into the dish and bake for 40 to 55 minutes until golden brown.
  2. Allow to cool for 10-20 minutes before slicing and serve.

Notes

Crustless quiche keeps well in the fridge for about 3-5 days and can be frozen for up to 2 months. To reheat, bake at 350°F (175°C) until warmed through. Add herbs or leftovers for variations.
