  • 16 ounces cream cheese, softened Make sure it's super soft for a velvety texture.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour (optional) For extra structure.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a large bowl, beat the cream cheese until smooth and creamy, about 2-3 minutes.
  3. Add the sugar, eggs, and vanilla, mixing until well combined.
  4. Stir in the sour cream, lemon juice, and flour until everything is just mixed.
  5. Pour the batter into the prepared pan.
Baking
  1. Bake for 50-60 minutes, or until the edges are set but the center remains jiggly.
Cooling
  1. Turn off the oven and let the cheesecake cool in the oven for about an hour.
  2. Chill in the fridge for at least 4 hours (overnight is even better!).

Notes

Serve with fresh fruits, chocolate or caramel drizzle, or nuts for added flavor and texture. Chilling helps the flavors mellow beautifully.
