  • 4 pieces chicken breasts Use good quality for extra tenderness.
  • 2 cups broccoli florets Fresh or frozen can be used.
  • 1 can cream of chicken soup Can be substituted with cream of mushroom soup.
  • 1 cup cheddar cheese, shredded Feel free to experiment with different cheddar varieties.
  • 1 cup chicken broth For added moisture and flavor.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Cooking
  1. Place the chicken breasts in the bottom of the Crockpot.
  2. In a separate bowl, mix together the cream of chicken soup, chicken broth, garlic powder, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Add broccoli florets on top.
  5. Cover and cook on low for 5 hours or until the chicken is cooked through.
  6. In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top, cover, and allow to melt.
  7. Serve warm over rice or pasta.

Notes

This recipe is great for meal prepping; store leftovers in the fridge for up to 4 days or freeze for up to 3 months. Reheat slowly over low heat, adding chicken broth to restore creaminess.
