  • 1 lb ground beef Browns best in a skillet
  • 1 can kidney beans, drained and rinsed Adds protein and fiber
  • 1 can black beans, drained and rinsed Additional protein source
  • 1 can corn, drained Adds sweetness
  • 1 can diced tomatoes with green chilies For added flavor
  • 1 cup diced carrots Enhances texture
  • 1 cup diced bell peppers Adds color and flavor
  • 1 onion, chopped For aromatic flavor
  • 2 cups beef broth Can substitute with chicken or vegetable broth
  • 1 teaspoon garlic powder Flavor enhancer
  • 1 teaspoon chili powder Adds warmth

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. Transfer the beef to the crockpot.
  3. Add the kidney beans, black beans, corn, diced tomatoes, carrots, bell peppers, onion, beef broth, garlic powder, and chili powder to the crockpot.
  4. Stir everything to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  2. Season with salt and pepper to taste before serving.
Serving
  1. Serve hot, preferably with cornbread.

Notes

For a spicier soup, add jalapeƱos or cayenne pepper. To make it creamier, stir in a splash of cream or sour cream before serving. Leftovers can be stored in the fridge for about 3-4 days or frozen for up to 3 months.
