  • 1 lb ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 1 cup elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat and drain excess fat.
  2. In a slow cooker, combine the browned beef, kidney beans, black beans, diced tomatoes, beef broth, elbow macaroni, onion, garlic, chili powder, cumin, salt, and pepper.
  3. Stir well to combine all ingredients.
Cooking
  1. Cover and cook on high for 3-4 hours or low for 6-8 hours, until the macaroni is tender.
  2. Stir in the shredded cheddar cheese until melted.
  3. Serve hot and enjoy your hearty Chili Mac!

Notes

For extra flavor, toast the garlic in the skillet before adding to the slow cooker. Serve with fresh cilantro, sour cream, or tortilla chips for added enjoyment. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
