  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Method
 

Preparation
  1. Place chicken thighs in the bottom of a crockpot.
  2. Add carrots, potatoes, onion, and garlic on top.
  3. Pour chicken broth over the ingredients.
  4. Season with thyme, rosemary, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or until the chicken is nice and tender.
  6. Serve warm and enjoy!

Notes

For serving, consider crusty bread and fresh herbs. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months. Reheat on the stove or in the microwave.
