- Place chicken thighs in the bottom of a crockpot.
- Add carrots, potatoes, onion, and garlic on top.
- Pour chicken broth over the ingredients.
- Season with thyme, rosemary, salt, and pepper.
- Cover and cook on low for 6-8 hours or until the chicken is nice and tender.
- Serve warm and enjoy!
Notes
For serving, consider crusty bread and fresh herbs. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months. Reheat on the stove or in the microwave.
