  • 2 pounds boneless, skinless chicken thighs
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 2 cups green salsa
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • as needed Fresh cilantro for garnish

Method
 

Cooking Instructions
  1. Place the chicken thighs in the crockpot.
  2. Add the chopped onion, minced garlic, green salsa, black beans, corn, cumin, chili powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  5. Shred the chicken with two forks inside the crockpot and mix well.
  6. Serve hot, garnished with fresh cilantro.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat slowly on the stove or in the microwave to maintain moisture.
