  • 3-4 lbs beef chuck roast Use a good quality cut for best results.
  • 2 tablespoons olive oil For searing the beef.
  • 1 onion, diced
  • 4 cloves garlic, minced To enhance flavor.
  • 1 jalapeño, chopped Adjust heat level to preference.
  • 2 limes, juiced Fresh juice is best for flavor.
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste Adjust according to preference.
  • 1 cup beef broth
  • 2 bay leaves For added flavor.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
  2. Place the seared beef in the Crockpot.
  3. Add onion, garlic, jalapeño, lime juice, cumin, oregano, paprika, salt, pepper, beef broth, and bay leaves to the Crockpot.
Cooking
  1. Cook on low for 8 hours or until the beef is tender and shreds easily.
  2. Remove the beef, shred it with forks, and return it to the Crockpot to mix with the juices.
Serving
  1. Serve in tacos, burritos, or over rice.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for about a month. Reheat with a bit of beef broth to retain juiciness.
