Ingredients
  

For the meatballs
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For the dish
  • 2 cups cheese tortellini
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Shape into meatballs.
Cooking
  1. In a Crock Pot, place meatballs and add beef broth. Cook on low for 6-8 hours.
  2. About 30 minutes before serving, add cheese tortellini and heavy cream.
  3. Stir in Parmesan cheese and cook until tortellini is tender.
  4. Garnish with fresh parsley before serving.

Notes

For a leaner option, swap ground beef for ground turkey or chicken. You can also add Italian herbs or crushed red pepper for extra flavor. If you like it extra creamy, throw in some cream cheese along with the heavy cream. To keep leftovers creamy, add a splash of broth when reheating.
