  • 1 pound chicken breast, diced
  • 1 pound andouille sausage, sliced
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 2 cups uncooked rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup frozen peas (optional)
  • 2 green onions sliced (for garnish)

Method
 

Preparation
  1. In the crockpot, combine chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper.
  2. Stir everything together until well mixed.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  2. About 30 minutes before serving, add frozen peas if desired.
  3. Once cooked, stir well, serve hot, and garnish with green onions.

Notes

For enhanced flavor, consider browning the sausage before adding it to the crockpot. Leftovers can be stored in the fridge for 3-4 days or frozen in airtight containers. Reheat before serving.
