  • 1 pound dried red beans Rinse and soak overnight
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 link smoked sausage, sliced Provides depth of flavor
  • 1 teaspoon Cajun seasoning Adjust for taste
  • 1 teaspoon smoked paprika
  • to taste none Salt and pepper
  • 6 cups chicken broth For cooking the beans
  • 4 cups cooked rice For serving
  • as needed none Green onions, for garnish Add for color and crunch

Method
 

Preparation
  1. Rinse and soak the red beans overnight in water. Drain before using.
  2. In a Crock-Pot, combine soaked beans, onion, bell pepper, celery, garlic, smoked sausage, Cajun seasoning, smoked paprika, salt, pepper, and chicken broth.
Cooking
  1. Cover and cook on low for 8 hours or until the beans are tender.
Serving
  1. Serve the Cajun bean mixture over cooked rice and garnish with sliced green onions.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. For freezing, let it cool completely before transferring to the freezer, where it will last for about 6 months. When reheating, add a splash of broth to keep it creamy.
