  • 2 pounds beef chuck, cut into 1-inch pieces Use a good cut of beef for best flavor.
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • to taste salt and pepper
  • for browning tablespoons olive oil Use olive oil for browning the beef.

Preparation
  1. In a large skillet, heat olive oil over medium heat. Brown the beef on all sides.
  2. Transfer the beef to the crock pot.
  3. Add carrots, potatoes, onion, garlic, beef broth, tomato paste, thyme, and bay leaf to the crock pot.
  4. Season with salt and pepper.
  5. Stir to combine, then cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  6. Remove the bay leaf before serving. Enjoy your hearty beef stew!

Notes

Leftovers keep well in the fridge for about 3-4 days. Freezes beautifully for up to 3 months. Reheat on stovetop with a splash of water if needed to prevent drying out. Consider adding peas or green beans for extra color and nutrition.
