  • 1 cup milk Regular or non-dairy milk can be used.
  • 1/2 teaspoon cayenne pepper Adjust according to spice preference.
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon black pepper To taste.
  • 2 tablespoons butter For dotting on top before baking.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a greased baking dish, layer half of the sliced potatoes.
  3. Sprinkle half of the cheddar cheese over the potatoes.
  4. In a bowl, mix together the heavy cream, milk, cayenne, salt, and black pepper. Pour half of this mixture over the potatoes and cheese.
  5. Repeat the layers with the remaining potatoes, cheese, and cream mixture.
  6. Dot the top with butter.
Baking
  1. Cover the dish with foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  3. Let it cool slightly before serving.

Notes

Serve these as a side to meatloaf or grilled chicken for a textural contrast. Can be stored in the fridge for about 3-5 days and frozen for up to 2 months.
