Preparation
- Preheat the oven to 375°F (190°C).
- In a greased baking dish, layer half of the sliced potatoes.
- Sprinkle half of the cheddar cheese over the potatoes.
- In a bowl, mix together the heavy cream, milk, cayenne, salt, and black pepper. Pour half of this mixture over the potatoes and cheese.
- Repeat the layers with the remaining potatoes, cheese, and cream mixture.
- Dot the top with butter.
Baking
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Let it cool slightly before serving.
Notes
Serve these as a side to meatloaf or grilled chicken for a textural contrast. Can be stored in the fridge for about 3-5 days and frozen for up to 2 months.
