Ingredients
  

Main Ingredients
  • 2 pieces chicken breasts
  • 1 cup rice Use any preferred variety.
  • 1/2 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 4 cloves garlic, minced Don't skip toasting for more flavor!
  • 1 pieces egg Beaten until frothy.
  • to taste Salt and pepper
  • as needed Olive oil for frying
  • as needed Fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cook the rice according to package instructions while the oven heats up.
  3. In a bowl, mix minced garlic, breadcrumbs, salt, and pepper.
  4. In another bowl, beat the egg until it’s nice and frothy.
  5. Dip the chicken breasts in the egg, then coat them with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and fry chicken until golden brown on both sides (about 5-7 minutes).
  2. Transfer the chicken to a baking dish and finish cooking in the oven for about 15-20 minutes.
  3. Serve the crispy garlic chicken over fluffy rice and garnish with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for about 3-4 days or frozen for up to 2 months. Reheat in the oven or microwave before serving.
