Preparation
- Preheat your oven to 400°F (200°C).
- Cook the rice according to package instructions while the oven heats up.
- In a bowl, mix minced garlic, breadcrumbs, salt, and pepper.
- In another bowl, beat the egg until it’s nice and frothy.
- Dip the chicken breasts in the egg, then coat them with the breadcrumb mixture.
Cooking
- Heat olive oil in a skillet over medium heat and fry chicken until golden brown on both sides (about 5-7 minutes).
- Transfer the chicken to a baking dish and finish cooking in the oven for about 15-20 minutes.
- Serve the crispy garlic chicken over fluffy rice and garnish with fresh parsley.
Notes
Leftovers can be stored in an airtight container in the fridge for about 3-4 days or frozen for up to 2 months. Reheat in the oven or microwave before serving.
