Main Ingredients
  • 2 cups cooked chicken, shredded Use rotisserie chicken for added flavor.
  • 1 cup BBQ sauce
  • 2 cups shredded cheese (cheddar or a blend)
  • 8 pieces flour tortillas Gluten-free tortillas can be used as a substitute.
  • 1 tablespoon olive oil For greasing the skillet.
Optional Toppings
  • sour cream For serving.
  • green onions For garnish.
  • cilantro For garnish.

Method
 

Preparation
  1. Preheat a skillet over medium heat.
  2. In a bowl, mix the shredded chicken and BBQ sauce until coated.
Cooking
  1. Place a tortilla in the skillet and sprinkle with cheese. Add a layer of the BBQ chicken mixture and top with another tortilla.
  2. Cook until the bottom tortilla is golden and cheese is melting, about 3-4 minutes.
  3. Carefully flip the quesadilla and cook the other side until golden.
  4. Remove from skillet and cut into wedges.
Serving
  1. Serve with optional toppings such as sour cream, green onions, or cilantro.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to a month. Reheat in a skillet until warm and crispy. For a healthier twist, use whole grain tortillas or mix different types of cheese for extra meltiness.
