Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 2 cups cream cheese, softened Let sit at room temperature for smooth blending.
  • 1 cup granulated sugar
  • 3 large eggs Use fresh eggs for best flavor.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy cream
For the topping
  • 1/4 cup granulated sugar For caramelizing on top.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs with melted butter and press the mixture into the bottom of a springform pan to form the crust.
  3. In a separate bowl, beat the cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and salt.
  6. Gradually add heavy cream until well combined.
  7. Pour the filling over the crust in the springform pan.
Baking
  1. Bake for about 50-60 minutes or until the center is set but slightly jiggly.
Cooling and Serving
  1. Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours or overnight.
  2. Before serving, sprinkle the top with 1/4 cup granulated sugar and use a kitchen torch to caramelize the sugar until golden brown.
  3. Allow it to cool briefly before slicing and serving.

Notes

For best results, chill the cheesecake overnight. A kitchen torch works best for caramelizing the sugar, but you can alternatively broil it carefully. Serve with fresh berries and whipped cream for a delightful experience.
