Method
 

Cooking
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and cook until fragrant.
  3. Add diced tomatoes and vegetable broth. Bring to a simmer and cook for about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  5. Stir in heavy cream and sugar, then season with salt and pepper.
  6. Finally, mix in the fresh basil before serving.

Notes

Serve with grilled cheese or on its own. Can be stored in an airtight container for up to 4–5 days in the fridge. Freeze for up to 3 months.
