Ingredients
  

For the filling
  • 2 cups fresh spinach, chopped Use fresh spinach for the best flavor.
  • 1 cup cream cheese, softened Can be substituted with dairy-free cream cheese.
  • 1/2 cup grated Parmesan cheese Optional; provides extra flavor.
  • 1/4 cup sour cream Adds creaminess to the filling.
  • 1 clove garlic, minced Toasting the garlic enhances its flavor.
  • to taste Salt and pepper Adjust according to preference.
For assembly
  • 1 package puff pastry sheets Chill for 10-15 minutes before rolling out.
  • 1 each egg, beaten For egg wash.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the spinach, cream cheese, Parmesan cheese, sour cream, garlic, salt, and pepper until well combined.
  3. Roll out the puff pastry on a floured surface and cut into rectangles.
  4. Place a spoonful of the spinach mixture onto each rectangle and roll them up tightly to form pinwheels.
  5. Place the pinwheels on a baking sheet lined with parchment paper.
  6. Brush the tops with the beaten egg.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until golden brown.
  2. Allow to cool slightly before serving.

Notes

These pinwheels can be stored in an airtight container in the fridge for about 3-4 days. You may also freeze them before baking; bake directly from frozen, adding a few extra minutes to the cooking time. Consider serving with a zesty dipping sauce for an extra kick.
