Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the spinach, cream cheese, Parmesan cheese, sour cream, garlic, salt, and pepper until well combined.
- Roll out the puff pastry on a floured surface and cut into rectangles.
- Place a spoonful of the spinach mixture onto each rectangle and roll them up tightly to form pinwheels.
- Place the pinwheels on a baking sheet lined with parchment paper.
- Brush the tops with the beaten egg.
Baking
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
These pinwheels can be stored in an airtight container in the fridge for about 3-4 days. You may also freeze them before baking; bake directly from frozen, adding a few extra minutes to the cooking time. Consider serving with a zesty dipping sauce for an extra kick.
