  • 1 lb gnocchi You can use fresh or frozen gnocchi.
  • 2 cups fresh spinach Can substitute with kale or arugula.
  • 1 cup feta cheese, crumbled For a vegan alternative, use dairy-free feta.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Let it get golden for better flavor.
  • to taste Salt and pepper
  • optional grated Parmesan cheese for serving

Method
 

Preparation
  1. In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
Cooking
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Toss in the fresh spinach and cook until wilted.
  3. Stir in the cooked gnocchi and crumbled feta cheese.
  4. Season with salt and pepper to taste.
  5. Cook until everything is heated through, about 3-4 minutes.
  6. Serve warm, topped with grated Parmesan cheese if desired.

Notes

This dish can be stored in the fridge for about 3 days in an airtight container. For longer storage, freeze and reheat with a splash of water.
