Main Ingredients
  • 1 pound sausage Use your choice of sausage.
  • 12 oz cheese tortellini Fresh or frozen tortellini can be used.
  • 4 cups chicken broth Low sodium recommended.
  • 1 cup heavy cream Can substitute with half-and-half or milk.
  • 2 cups kale, chopped Or substitute with spinach.
  • 1 medium onion, diced
  • 2 cloves garlic, minced Toasted for best flavor.
  • to taste Salt and pepper
  • 2 tablespoons Olive oil For cooking.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and garlic; sauté until fragrant.
  3. Add the sausage, breaking it up as it cooks until browned.
  4. Stir in chicken broth and bring to a boil.
Cooking
  1. Add the tortellini and cook according to package directions.
  2. Once tortellini is cooked, reduce heat to low and stir in heavy cream and kale.
  3. Season with salt and pepper to taste.
  4. Simmer for a few more minutes until the kale is wilted.
  5. Serve hot.

Notes

Store in the fridge for 3-4 days or freeze in an airtight container for up to 3 months. Reheat on low, adding broth or cream to maintain creaminess.
