  • 1/2 cup milk (dairy, almond, oat, or coconut)
  • 1/4 cup plain Greek yogurt or coconut yogurt for a dairy-free option
  • 2 tablespoons creamy peanut butter
  • 1 medium ripe banana half mashed and half sliced for topping
  • 1 tablespoon maple syrup or honey (optional) for added sweetness
  • 1 tablespoon chia seeds
  • 1 pinch salt
Optional Toppings
  • dark chocolate chips for a sweet twist
  • cinnamon for warm flavor
  • crushed peanuts for added crunch

Method
 

Preparation
  1. Mash half of the banana in a jar or small bowl with a fork until mostly smooth, leaving a few lumps for texture.
  2. Add the milk, Greek yogurt, and maple syrup (if using). Stir until the banana is fully incorporated.
  3. Mix in the rolled oats, chia seeds, and a pinch of salt. Stir everything together until evenly combined.
  4. Spoon the peanut butter on top and gently swirl it in with a knife or spoon.
  5. Seal the jar and refrigerate for at least 6 hours or overnight.
Serving
  1. In the morning, stir the oats. If they’re too thick, add a splash of milk to reach your desired consistency.
  2. Top with sliced remaining banana, a drizzle of peanut butter, and any optional toppings you desire. Serve cold or microwave for 30-45 seconds for warm oats.

Notes

These oats are good in the fridge for up to three days. For warmth, microwave for 30-45 seconds. Ripe bananas are key for natural sweetness. Feel free to mix in other nut butters or fruits for variety.
