  • 8 oz Soba noodles Cook according to package instructions.
  • 3 tbsp Miso paste Use your favorite type of miso.
  • 2 tbsp Sesame oil For sautéing.
  • 2 cups Fresh vegetables (e.g., bell peppers, carrots, cucumbers) Chopped and mixed for added color and flavor.
  • 2 cloves Garlic Minced.
  • 1 in Ginger Minced.
  • 2 tbsp Soy sauce For additional flavor.
  • 2 stalks Green onions Sliced, for garnish.
  • 1 tbsp Sesame seeds For garnish.

Method
 

Preparation
  1. Cook the soba noodles according to the package instructions. Drain and set aside.
  2. In a pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
Cooking
  1. Stir in miso paste and a splash of soy sauce, mixing well.
  2. Add your choice of fresh vegetables to the pan and stir-fry until just tender.
Assembly
  1. Toss the cooked soba noodles with the miso sauce and vegetables until well coated.
  2. Serve warm, garnished with sliced green onions and sesame seeds.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat on low heat with a splash of water or soy sauce. Great alternatives for vegetables include broccoli or snap peas. For added richness, drizzle toasted sesame oil before serving.
