- In a large pot, melt butter over medium heat.
- Add the chopped green onions and sauté until soft – about 2-3 minutes.
- Toss in the diced potatoes and pour in the vegetable broth.
- Bring it to a boil, then reduce heat and let it simmer until the potatoes are tender, around 20 minutes.
- Stir in the kale and cook for an additional 5 minutes.
- Use an immersion blender to blend the soup until creamy (or mash the potatoes for a chunkier texture).
- Stir in the heavy cream and season generously with salt and pepper.

Notes
You can store it in the fridge for up to 3 days or freeze it for up to 2 months. To reheat, add a splash of broth or cream if it thickens up too much. For variations, consider adding garlic when softening the onions, or for a lighter version, use half-and-half or coconut milk.
