Ingredients

Main Ingredients
  • 1 cup rolled oats Use rolled oats for best texture.
  • 2 cups milk (or non-dairy alternative)
  • 2 tablespoons sugar (or to taste) Adjust sweetness to your preference.
  • 2 eggs For a vegan version, swap with flax eggs.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt Balances sweetness.
  • Pinch nutmeg or cinnamon (optional)
  • Fresh fruit or nuts for topping (optional) Consider berries or bananas.

Method

Cooking
  1. In a medium saucepan, combine milk, oats, and salt. Cook over medium heat, stirring occasionally until the mixture begins to thicken (about 5-7 minutes).
  2. In a separate bowl, beat the eggs with sugar and vanilla extract.
  3. Slowly whisk the hot oat mixture into the egg mixture to temper the eggs.
  4. Return the combined mixture to the saucepan over low heat. Stir continuously until the custard thickens to your desired consistency (about 2-3 minutes).
  5. Serve warm, topped with fresh fruit, nuts, or a sprinkle of cinnamon.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat with a splash of milk for creaminess.
