  • 1 lb boneless, skinless chicken breasts chopped into bite-sized pieces
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese cut into cubes for faster melting
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach washed and roughly chopped
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper

Method
 

Preparation
  1. Chop the chicken into bite-sized pieces.
Cooking
  1. Heat oil in a large skillet over medium-high heat.
  2. Add the chicken and cook until golden brown, about 5-7 minutes.
  3. Lower the heat, then add cream cheese and chicken broth, stirring until smooth.
  4. Toss in gnocchi and spinach. Cover and simmer for 5-7 minutes until the gnocchi is tender.
  5. Stir in shredded cheddar cheese and bacon bits until melted.
  6. Serve hot in bowls, garnished with extra cheese if desired.

Notes

For extra creaminess, add a splash of milk. If desired, serve with a crisp green salad or crusty bread. This dish keeps well in the fridge for about 3-4 days, or can be frozen for up to 2 months.
