  • 1 lb Ground Beef (or ground turkey) Use ground turkey for a lighter option.
  • 1 medium Onion (Yellow or white)
  • 2 cloves Garlic (or garlic powder)
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes (fire-roasted optional)
  • 1 cup Corn (frozen or canned)
  • 15 oz Black Beans (any canned bean)
  • 3 medium Potatoes (waxy)
  • 2 tbsp Smoked Paprika (or regular paprika)
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Heavy Cream (or coconut milk) Use coconut milk for a dairy-free option.
  • 1 cup Shredded Cheddar Cheese
  • 2 tbsp Green Onions
  • 1 cup Tortilla Chips For topping.

Method
 

Cooking Steps
  1. Brown the beef in a large pot over medium heat until browned and drain excess fat.
  2. Add onion and garlic, cooking until soft and fragrant.
  3. Stir in beef broth, diced tomatoes, corn, black beans, and potatoes.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.
  5. Whisk in heavy cream and cheddar cheese until smooth. Cook for another 5 minutes until heated through.
  6. Top with green onions and sprinkle tortilla chips on top before serving.

Notes

Store soup in the fridge for 3-4 days in an airtight container. It can also be frozen for up to 3 months. Reheat gently on the stove or in the microwave, adding a splash of broth if necessary.
