Ingredients
  

For the chicken salad
  • 2 cups cooked chicken, shredded Use leftover or rotisserie chicken for convenience.
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 1 tablespoon Dijon mustard
  • to taste Salt and pepper
For assembly
  • 4 large tortillas or wraps
  • Lettuce leaves Lettuce leaves For added crunch.

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, mayonnaise, Greek yogurt, diced celery, diced red onion, and Dijon mustard.
  2. Mix well and season your salad with salt and pepper to taste.
Assembly
  1. Lay out the tortillas and place a lettuce leaf on each one.
  2. Spoon the chicken salad mixture onto the lettuce and wrap tightly.
  3. Cut in half and serve. Enjoy the yum!

Notes

These wraps can be stored in the fridge for 3-4 days. Assembly should be done fresh to avoid sogginess.
