Main Ingredients
  • 2 pieces chicken breasts Can substitute with chicken thighs.
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream Can swap for half-and-half for a lighter version.
  • 1 cup chicken broth Use low-sodium if preferred.
  • 1 cup grated Parmesan cheese Add mozzarella for a cheesy kick.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Sauté until fragrant, not burnt.
  • to taste Salt and pepper
  • for garnish Fresh herbs (parsley or basil)

Method
 

Preparation
  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add chicken breasts to the skillet and cook until golden brown on both sides and cooked through. Remove from the skillet and slice.
Cooking
  1. In the same skillet, add chicken broth and bring to a simmer.
  2. Stir in heavy cream and bring to a gentle boil.
  3. Add the grated Parmesan cheese and stir until the sauce thickens. Season with salt and pepper.
  4. Add the cooked pasta and sliced chicken to the skillet, tossing them to coat with the sauce.
Serving
  1. Serve topped with fresh herbs and additional grated cheese if desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat on the stovetop with a splash of chicken broth. Freezes well for about 2 months.
