  • 1 cup shredded cheese (cheddar or mozzarella) For a different flavor, use your favorite melty cheese
  • 1 cup cooked pasta (optional) Whole wheat pasta can be used for a healthier version
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust according to your preference
  • 1 tablespoon olive oil For sautéing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add cooked chicken and chopped spinach, sautéing until the spinach is wilted.
  4. Stir in cream of chicken soup, milk, garlic powder, salt, and pepper.
  5. If using pasta, add it to the mixture and stir to combine.
  6. Transfer the mixture to a casserole dish, and top with shredded cheese.
  7. Bake for 25-30 minutes, or until cheese is bubbly and golden.
  8. Serve warm.

Notes

Store leftovers in the fridge for 3-4 days in an airtight container. Can also freeze for up to 3 months. Reheat in the oven or microwave before serving. Consider topping with breadcrumbs for extra crunch.
