Main Ingredients
  • 1 lb ground beef Preferably lean.
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cups beef broth Can use low sodium.
  • 1 cup elbow macaroni Can substitute with any pasta.
  • 1 cup shredded cheddar cheese Extra for serving.
  • 1 cup milk Any milk will work.
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the diced onion, carrots, and celery to the pot. Cook until the veggies are tender.
  3. Stir in the beef broth and bring it to a boil.
  4. Toss in the elbow macaroni and cook according to package instructions until al dente.
  5. Reduce heat and stir in the milk and cheddar cheese until fully melted and creamy.
  6. Season with salt, pepper, garlic powder, and onion powder.
  7. Serve warm and enjoy!

Notes

For extra richness, add a splash of heavy cream before serving. This soup can be stored in the fridge for 3-4 days or frozen for longer storage.
