  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil Can use applesauce as a healthier alternative.
  • 1 tsp vanilla extract
  • 2 pieces eggs Beat in one at a time.
  • 1 1/2 cups all-purpose flour Can substitute with almond flour for gluten-free.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped nuts (optional) Experiment with different nuts or chocolate chips.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set it aside.
  2. In a big bowl, mix together the ripe bananas and cream cheese until smooth.
  3. Add in both sugars, vegetable oil, and vanilla extract. Stir until well combined.
  4. Beat in the eggs one at a time, blending well after each addition.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the banana mixture, mixing just until combined. If you like nuts, fold them in.
Baking
  1. Pour the batter into the prepared loaf pan and smooth out the top.
  2. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow it to cool in the pan for a bit before transferring it to a wire rack.

Notes

Serve warm with butter, honey, or cream cheese frosting. Store wrapped in plastic for up to 3-4 days; refrigerate or freeze for longer storage.
