  • 1 pound crawfish tails, cooked Use fresh or frozen crawfish; thaw and drain if frozen.
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 cups cooked white rice Can use leftover rice.
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese Add more cheese for extra flavor.
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Toasting garlic enhances flavor.
  • to taste salt and pepper
  • 1 teaspoon paprika
  • 1 teaspoon Cajun seasoning Add more for extra spice.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Sauté the onion, bell pepper, and garlic until soft.
  3. Add the cooked crawfish tails, cooked rice, cream of mushroom soup, chicken broth, paprika, Cajun seasoning, salt, and pepper. Stir to combine.
  4. Pour the mixture into a greased casserole dish and top with shredded cheddar cheese.
Baking
  1. Bake for 25-30 minutes or until bubbly and golden on top.
  2. Let it cool slightly before serving.

Notes

Serve hot topped with fresh herbs or better with a side salad and garlic bread. Leftovers can be stored in the fridge for 3-4 days. For make-ahead, assemble beforehand and bake later.
