  • 6 slices bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
Dressing
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
Garnish
  • Chopped green onions

Method
 

Preparation
  1. In a large bowl, combine the sweet corn, crumbled bacon, and shredded cheddar cheese.
  2. In a separate small bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and pepper.
  3. Pour the dressing over the corn mixture and stir until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Garnish with chopped green onions before serving.

Notes

For a vegan version, swap mayo for high-quality vegan mayo and omit the bacon. Use fresh corn off the cob for extra sweetness and sprinkle in jalapeƱos for added spice.
