  • 1 lb kielbasa, sliced
  • 4 cups potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups kale or spinach, chopped

  • 1 tablespoon olive oil

Method
 

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat. Add the sliced kielbasa and cook until browned.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the diced potatoes and pour in the broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
  4. Add the heavy cream and chopped kale or spinach. Simmer for an additional 5 minutes.
  5. Season with salt and pepper to taste and serve hot.

For best flavor, serve garnished with a sprinkle of pepper or fresh herbs. Pair with crusty bread for a comforting meal. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. Cool before freezing and reheat with a splash of broth if needed.
