  • 2 medium Yellow Onions (Caramelized until golden.)
  • 2 tablespoons Butter (For caramelizing the onions.)
  • 8 ounces Bacon (Cooked until chewy.)
  • 4 large Eggs (At room temperature.)
  • 1 cup Heavy Cream/Half-and-Half (Adds creaminess to the custard.)
  • 1 teaspoon Salt (Adjust to taste.)
  • 1 teaspoon Pepper (Adjust to taste.)
  • 1 cup Sharp Cheddar Cheese (Melts beautifully.)

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare your pie crust in a greased pie dish.
  2. In a skillet, melt the butter over medium heat, add the onions, and caramelize until golden brown and fragrant.
  3. Cook the bacon until it’s chewy, then chop it into pieces and mix it with the caramelized onions.
  4. In a bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth.
  5. Sprinkle the bacon and onion mixture into the pie crust, pour the egg mixture over, and then top with shredded Cheddar cheese.
  6. Bake for about 35-40 minutes or until the quiche is set and slightly golden on top.
  7. Allow to cool slightly before slicing.

Notes

Serve alongside a fresh garden salad or sliced avocados. Keeps well in the fridge for about 3-4 days and can be frozen for up to 2 months.
