Preparation
- In a skillet, cook onions in butter over low heat until golden (about 20 minutes). Let them cool.
- Cook bacon until chewy, then chop it into big pieces. Allow to cool.
- Preheat your oven to 400°F (200°C).
- Roll out the pie crust in a deep pie pan.
- Whisk together eggs, cream, salt, and pepper. Stir in the onions, bacon, and cheese.
Baking
- Pour the filling into the crust. Cover with foil and bake for 40-45 minutes.
- Remove the foil and bake for an additional 10-15 minutes until set.
- Allow to rest for 10-15 minutes before slicing.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Quiche freezes well for up to 2 months—just wrap it in foil and place it in a freezer bag.
