  • 1 deep-dish deep-dish pie crust
  • 2 large yellow onions, sliced
  • 2 tablespoons butter
  • 8 slices bacon Cook until chewy, then chop
  • 8 large eggs
  • 1.5 cups heavy cream or half-and-half Can substitute with half-and-half
  • Salt and pepper, to taste
  • 2 cups grated sharp cheddar cheese Add some on top for crunch

Method
 

Preparation
  1. In a skillet, cook onions in butter over low heat until golden (about 20 minutes). Let them cool.
  2. Cook bacon until chewy, then chop it into big pieces. Allow to cool.
  3. Preheat your oven to 400°F (200°C).
  4. Roll out the pie crust in a deep pie pan.
  5. Whisk together eggs, cream, salt, and pepper. Stir in the onions, bacon, and cheese.
Baking
  1. Pour the filling into the crust. Cover with foil and bake for 40-45 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until set.
  3. Allow to rest for 10-15 minutes before slicing.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Quiche freezes well for up to 2 months—just wrap it in foil and place it in a freezer bag.
