Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, diced
  • 1 avocado, diced Add last minute to keep it fresh
  • 1 lime juiced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • 1 teaspoon chili powder (optional)

Method
 

Preparation
  1. In a large bowl, combine the black beans, corn, red bell pepper, green bell pepper, red onion, and avocado.
  2. In a separate small bowl, whisk together the lime juice, chopped cilantro, salt, pepper, and chili powder if using.
  3. Pour the dressing over the bean mixture and toss gently to combine.
  4. Let it sit for about 10 minutes before serving to allow the flavors to meld.
Serving Suggestions
  1. Serve as a dip with tortilla chips or as a side dish.

Notes

For best flavor, let it sit for 10 minutes before serving. Can be stored in the fridge for about 3 days in an airtight container. Prep a day in advance but add avocado just before serving.
