Ingredients
  

Main Ingredients
  • 1 can (15 ounce) black beans Rinsed and drained
  • 1 can (15 ounce) black-eyed peas Rinsed and drained
  • 2 cups diced tomatoes
  • 1 jalapeño, diced
  • 1 cup corn
  • 1 avocado, chopped Use ripe for creaminess
  • 1 orange bell pepper, diced
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
Dressing Ingredients
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon honey Can swap for agave nectar
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. In a large bowl, combine the rinsed and drained black beans, black-eyed peas, diced tomatoes, jalapeño, corn, chopped avocado, bell pepper, red onion, and fresh cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin, salt, and pepper to create the dressing.
  3. Pour the dressing over the vegetable and bean mixture, and gently toss to coat everything evenly.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Notes

This dip keeps well for about 3 to 5 days in the fridge in an airtight container. Customize the ingredients as desired, using different beans or adding more vegetables. Letting it marinate enhances the flavor.
