Ingredients
  

Beans and Veggies
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 sweet bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely diced or half of a large red onion
  • 1 jalapeño pepper, finely diced remove seeds for less heat
  • 1 cup cherry tomatoes, diced or quartered
  • 1 avocado, diced add just before serving
  • 1/4 cup fresh cilantro, chopped
Dressing
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 lime, juiced or 2 T bottled lime juice
  • 1 tbsp honey or agave nectar optional
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and black pepper to taste

Method
 

Preparation
  1. Dice all your veggies and set them aside. For super quick prep, use a chopper to finely chop everything except the cilantro and avocado.
Mixing
  1. In a large bowl, combine the black-eyed peas, black beans, corn, bell peppers, onion, jalapeño, and tomatoes.
Dressing
  1. In a small bowl or jar, whisk together the olive oil, red wine vinegar, lime juice, honey (if using), garlic powder, chili powder, cumin, salt, and pepper. Adjust the seasonings to your taste.
Combine
  1. Pour the dressing over the vegetable mixture and gently toss until everything is nicely coated.
Serve
  1. Right before serving, fold in the diced avocado for that creamy goodness.
  2. Serve with tortilla chips, pita chips, or as a topping for tacos, burrito bowls, or salads.

Notes

This dish is best enjoyed fresh, but it keeps well! Store in an airtight container in the fridge for about 3 days. Skip adding the avocado until serving to maintain its texture. Give it a quick stir before serving to reinvigorate those flavors.
