Ingredients
  

Dry Ingredients
  • 2.5 cups almond flour Can be substituted with all-purpose flour.
  • 1 teaspoon baking soda Helps the bread rise.
  • 2 teaspoons cinnamon Adds a warm flavor.
Wet Ingredients
  • 2 ripe bananas, mashed The riper, the sweeter.
  • 3 large eggs Can be replaced with flaxseed meal for a vegan option.
  • 0.5 cup cottage cheese Greek yogurt or silken tofu can also be used.
  • 3 tablespoons maple syrup Can substitute with brown sugar.
  • 2 teaspoons vanilla extract For added sweetness.
Optional Mix-ins
  • 0.5 cup walnuts, chocolate chips, or blueberries Choose any or all for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan with parchment paper and grease.
  2. In a large mixing bowl, mash the ripe bananas. Then, add the eggs, cottage cheese, maple syrup, and vanilla extract; mix until smooth.
  3. Gradually add in the almond flour, cinnamon, and baking soda to the wet mixture; stir gently until combined.
  4. Fold in any optional mix-ins if desired.
Baking
  1. Transfer the batter to the prepared loaf pan and smooth the top.
  2. Bake for about 50 minutes, checking at 30 minutes and covering with foil if it’s browning too quickly.
  3. Check for doneness by inserting a toothpick into the center; bake longer if needed.
Cooling
  1. Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely before slicing.

Notes

For best results, keep an eye on the browning; nobody likes burnt edges! Store in the fridge for up to 5 days or freeze for longer shelf life.
