Preparation
- Preheat the oven to 350°F (175°C) and prepare a loaf pan with parchment paper and grease.
- In a large mixing bowl, mash the ripe bananas. Then, add the eggs, cottage cheese, maple syrup, and vanilla extract; mix until smooth.
- Gradually add in the almond flour, cinnamon, and baking soda to the wet mixture; stir gently until combined.
- Fold in any optional mix-ins if desired.
Baking
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for about 50 minutes, checking at 30 minutes and covering with foil if it’s browning too quickly.
- Check for doneness by inserting a toothpick into the center; bake longer if needed.
Cooling
- Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely before slicing.
Notes
For best results, keep an eye on the browning; nobody likes burnt edges! Store in the fridge for up to 5 days or freeze for longer shelf life.
